Executive Chef Rossana Radden is widely known for her amazing French, Italian, Moroccan, Mediterranean, South American and Asian cuisine styles, and has become highly respected for her profound knowledge of nutrition, especially the precise interactions of food and body chemistry during stress. She works regularly with LA's leading physicians, nutritionists, university coaches and fitness trainers. She knows better than anyone what food can do to you, and how you can make it work for you. Her diets and meal plans are comprehensive, and they are not cheap. But after a day or two, you will start to feel lighter and more energetic. Then you will feel better in general and look better in particular. At which point you will ask yourself why you didn't do this sooner.

 

A Typical One-Week Meal Plan

Day 1
Breakfast
Rossana's burrito: scrambled egg whites, caramelized onions, avocado, tomato, homemade black beans and salsa wrapped in a light whole wheat tortilla, topped with cheddar cheese.
Snack 1:
Baked peach with almonds
Lunch:
Panzanetta salad: chopped roasted peppers, cucumbers, red onions and sliced broiled chicken tossed with vinaigrette dressing and croutons.
Snack 2:
Slices of chicken with homemade apple sauce
Dinner:
Sillau salmon served with green beans and roasted potatoes

Day 2
Breakfast:
Napolitano eggs: two basted eggs in tomato sauce served with two turkey links and one slice of light whole wheat toast
Snack 1:
Cucumber slices with feta cheese
Lunch:
Portabello bun sandwich with homemade tomato sauce, turkey burger, roasted peppers, roasted zucchini and light mozzarella cheese
Snack 2:
Turkey chorizo with tomato slices
Dinner:
Stuffed potato with turkey Bolognese and cucumber salad with grapefruit dressing

Day 3
Breakfast:
Green omelet: egg whites with fresh spinach, mushrooms and cream cheese served with rye toast and oranges slices
Snack 1:
Baked apple with almonds
Lunch:
Shrimp spinach salad: spinach, red onions, tomato, roasted walnuts and shaved parmesan cheese with grilled shrimp, served with rye toast
Snack 2:
Two turkey meatballs in tomato sauce with zucchini linguini
Dinner:
Chermoula white fish: served with broiled asparagus and vegetable brown rice

Day 4
Breakfast:
Cold granola: dried fruit, nuts, non fat yogurt with a scoop of whey protein ( optional) served with cinnamon grapefruit
Snack 1:
Homemade banana bread
Lunch:
Tuna salad : white albacore tuna with tomato, celery, black olives and red onions served in a bed of cucumbers and sliced tomato marinated with lemon dressing and a side of light whole wheat toast
Snack 2:
Crudités with hummus
Dinner:
Turkey meatballs with homemade tomato sauce served with potato balls and mixed seasonal roasted vegetables

Day 5
Breakfast:
Egg in the basket: basted eggs in whole wheat English muffin served with one strip turkey bacon, a turkey patty and melon slices.
Snack 1:
Non- fat cottage cheese with sliced apple and almonds
Lunch:
Pesto chicken Panini: roasted eggplant, grilled zucchini, grilled tomato with a fresh mozzarella pressed with a light 90 cal. rye toast
Snack 2:
Seasonal berries with non- fat yogurt sprinkled with granola
Dinner:
Beef fajitas with sliced onions, tomato, peppers, cilantro served with corn tortillas wedges

Day 6
Breakfast:
Flourless chocolate crepe topped with sugar free jam and sliced banana served with two strips of turkey bacon
Snack 1:
Melon slices
Lunch:
Lentil soup with chopped chicken served with side of fruit
Snack 2:
Zucchini boats filled with ratatouille
Dinner:
Chicken tetrazzini with roasted potato and baked zucchini slices

Day 7
Breakfast:
Apple oatmeal cooked with apples, almonds and raisins, mixed with a scoop of whey protein (optional), served with fruit.
Snack 1:
Rye toast with non-fat cheese
Lunch:
Roasted beef served with Cuban black beans and red cabbage
Snack 2:
Eggplant toast with caramelized red onions
Dinner:
Zucchini fritters: flourless zucchini pancakes with baked yam fries and roasted vegetable

 

Rapid Loss Diets

Our Rapid Loss Diet was developed for clients who need to quickly lose a few pounds for an upcoming special occasion, frequently a wedding and often an award or charity event. Many of our celebrity clients call us to help them lose an inch or two before a photo, film or television shoot. Over the years, we have worked with some of LA's leading physicians, nutritionists and fitness trainers to create a safe, healthy, way to lose weight quickly.

We always consult with a client's physician and other health care professionals before starting a Rapid Loss Diet. By doing so, we can create a personalized diet based on each client's medical history, body type, weight, height, gender and activity level.

With soft proteins and minimal carbohydrates to reduce fluid retention, and a precise mix of high water content vegetables to maintain proper hydration, the weight and inches can fall off surprisingly quickly. And that's with three delicious meals -- breakfast, lunch and dinner -- and two snacks a day. While we can't legally say it's painless -- no Hagen Daz bars on this one -- we can say it is a surprisingly easy, comfortable and pampered way to come down a size or two in a very short amount of time.

 

Total Wellness Meal Plans

All bodies are different. And each of our personalized Meal Plans are different because of it. When we create a Total Wellness Meal Plan for a new client, we start with an in-person interview. We need to get some basic health information, and we like to find out what your goals are. And what your likes and preferences are, not just in food, but in life. How active are you, how stressed are you, how organized or distracted are you, what happened that made you suddenly want to get back in shape? All these things help inform us about how your body works and how it responds to food. We've learned that the more we can cater a diet to your body's specific needs, along with your personal tastes, the more likely you will stay on the diet and be able to reach your goals.

Not that you should prepare yourself for any undue suffering. Our meals are considered among the healthiest in Los Angeles, and certainly among the most delicious, surprising and delightful. Depending on your Meal Plan, you can enjoy everything from Beef Tenderloin and Asparagus to Sillau salmon with Roasted Potatoes. Rosanna's Breakfast Burrito with Avocado and Black Beans to Scrambled Eggs with Smoked Salmon and Capers. Even Pesto chicken Panini and -- wait for it -- Chocolate Crepes. Just go back and look at the sample menus above. And, yes, we must admit there's also Rye toast with non-fat cheese. It's just a snack, but still. We never claimed this would be totally painless, but you're a grown up. You can handle it.

Vegan and Vegetarian Diets

Our vegan and vegetarian clients enjoy a wonderful passion. They stand up and champion -- often vigorously, sometimes courageously -- the ethics of clean body, mind and spirit. We hold them in enormous respect and follow rigorous methods and guidelines to make sure their values are upheld. Members of our kitchen staff who work with meat, dairy and seafood products do not go near the Vegan prep and cooking area. Period. We're as strict with our Vegan guidelines as we are with Kosher. Some crossover does occur with the less restricted vegetarian meals, but not much. Our clients' trust is too important to us.

That being said, there is no restriction whatsoever on the fantastic tastes, flavors and textures of our vegan and vegetarian meals. Blessed as we are with year-round Farmer's Markets, just-picked seasonal produce and ingredients every day of the week -- except Sunday, when we sleep in -- there is no limit to the miracles we can create. Tossed up or stir fried with our exquisite Asian and Mediterranean tofu and soy recipes, we surprise and delight our clients with every delivery.

 

Meal Programs for Athletes

Kosher Diets

A secured portion of our kitchen is set aside for strict kosher compliance, where we use only kosher ingredients. Once a member of our kitchen or cooking staff is assigned to the kosher section, they are not allowed to work in other parts of the kitchen for the remainder of the day. This is not a guideline. This is a rule.
